NEW YORK CHEFS CELEBRATE JAPAN: A BENEFIT FOR THE GOHAN SOCIETY

On October 10, 2018 food enthusiasts and Japanophiles will be able to have the fantasies of their taste-buds satisfied as New York’s most celebrated chefs join together to raise money for the Gohan Society, whose mission is to foster an understanding and appreciation of Japan’s culinary heritage in the United States through outreach to chefs, culinary arts professionals, and all who admire and enjoy Japanese culture. The Gohan Society was founded by Saori Kawano of Korin, who has been supplying chefs with Japanese knives and tableware since 1982. Simply known to all as Saori san, she has been a force in the advancement of chef’s knowledge of using Japanese made tools of their trade, and exposing them to the sublime beauty of Japanese culinary techniques and cuisine.
Saori has used her connections to begin the chef exchange program and each year the Gohan Society sends chefs from the States to Kanazawa, Ishikawa Prefecture through Gohan’s scholarship program. The goal of this program is to bring American chefs into Japan kitchens to further their knowledge of Japanese ingredients, and bring the flavors they encounter back to their American kitchens. Numerous sous chefs, pastry and line cooks from celebrated kitchens throughout the United States have been brought to Japan by the Gohan Society. Funds raised from the event will go towards more programs such as this.
What makes Gohan’s October 10th event so sought after are the participants and honorees. Where else can you find the likes of David Bouley, Daniel Boulud, Gabriel Kreuther, Alfred Portale, Masaharu Morimoto, Toshio Suzuki, Ivan Orkin, and many more cooking under one roof? Being honored is Michelin Star Chefs Michael Anthony of Gramercy Tavern in New York City and Shin Takagi of the renowned Zeniya in Kanazawa, Japan who hosts the culinary professionals Gohan brings to Kanazawa yearly. Chef Anthony and Chef Takagi have collaborated in the past, and they are both active supporters of The Gohan Society’s U.S.-Japan Culinary Cultural Exchange Chefs Scholarship Program. They embody the spirit of Gohan and the collaboration between the United States and Japan.
While food events are all the rage in the past years, this event brings chefs together to raise funds for an organization which helps them in their quests to present unique foods and preparations to their guests. The Gohan Society allows them to learn the traditions of Japanese cuisine, and gives them the knowledge from which they can then let their imaginations and talents take over. This year premium Wagyu beef, fish, and other ingredients will be flown in from Japan for these chefs to serve at the event, therefore the food items served are guaranteed to be crafted for this night solely, and will not be tasted elsewhere.
